Green Tomato and Apple Salsa
Fall is coming to Santa Fe, it's quite nippy at night and we have had a couple of cold days, the trees are turning bright yellow and gardeners are preparing for the frost. My friend Janet was clearing her garden and brought me a large bowl of green tomatoes, as they wouldn't survive the cold.
Lucky me! Soon I will plunge into a luscious batch of fried greens tomatoes, and tonight I tried making a green tomato salsa and it turned out great. Very refreshing with bits of apple!
Ingredients:
1 cup finely diced green tomato (1 large tomato)
1/2 cup finely diced red delicious apple
1/3 cup finely diced red onion
1 garlic clove puréed or finely chopped
1/3 cup coarsely diced cilantro
1-2 Tbs extra virgin olive oil
1 Tbs champaign vinegar
salt to taste (I prefer kosher salt)
hot chili to taste
Mix all ingredients in a bowl. Can be served as a salsa or a fresh relish.
