DIVINE! Sautéd Apples in Brandy Glaze



As it is still quite cool in Santa Fe, I decided to do a warm and yummy apple topping for ice cream. It was truly divine, rich and tangy with complex well-melded flavors. And, best of all it was so easy and took just 15 minutes to make. It can be made in advance, but there will be less sauce as the apples absorb the juices, I prefer it with more sauce.

Ingredients:

  • 4 tart apples
  • 4 Tbs butter
  • 1 c brandy
  • 1/3 c brown sugar
  • 1 teaspoon salt
  • 2  TBS fresh grated ginger
  • 1 TBS fresh grated nutmeg
  • 1 TBS ground cinnamon
  • 2 TBS orange juice concentrate
  • 1 TBS fresh lemon juice
  • 1/3 cup dried cranberries
  • 2 TBS cornstarch dissolved in hot water
  • Candied ginger slices and toasted almonds for garnish, if desired


Slice apples and sauté in butter about 5 minutes until slightly soft.  Add all ingredients except the cornstarch and sauté on high for a few minutes until well blended and a glaze begins to form. 

Add the cornstarch through a mesh strainer and cook on med heat for a few minutes until slightly thickened.  Serve warm over ice cream and add garnish if desired.
