Refreshing Watermelon Soup with Tingling Bite!
This soup never fails to be a hit. It is delicious, fresh and interesting. Most people don't know what's in it, and EVERYONE loves it. And, best of all, it is very easy, taking just a few minutes. I have served this many times and each time it is the hit of the meal and what everyone remembers. Makes a great light soup to go with salad for lunch.
Ingredients:
Watermelon (seedless is best)
Horseraddish
Salt
Garnish with a dollop of sour cream
The quantities depend on the sweetness of the watermelon and the bite of the horseradish. They should be equal strengths on the palate. 6 cups of soup will take as much as 1/2 cup of horseradish. Do not be afraid of the horseradish, be sure you have a bite and you taste it. Add salt to even out the two flavors.
Cut watermelon and purée in a processor or blender. If it has seeds be sure to remove them first. Pour into a bowl and add horseradish and salt to taste.
Serve very chilled with chopped chives or a sprig of parsley to garnish.
The soup can be frozen, and in fact it makes a great ice in the winter to serve between savory courses.
